5 And it is customary to eat dairy foods and honey, based on “honey and milk under your tongue.” And there are additional hints regarding the eating of dairy. A hint was found in the Torah in the initial letters of “A new [offering] to the Lord on your Weeks.” And this is the wording of our teacher the Rema: “And it is customary to eat dairy foods on the first day of Shavuot. And it seems to me the reason is like the two cooked dishes taken on the night of Passover, one in memory of the Passover offering and one in memory of the festival offering. So too we eat a dairy food and a meat food. And we must bring with them two loaves of bread on the table, which is in place of the altar, and this serves as a remembrance of the two loaves that were offered on the Day of First Fruits.” End of his words. And also because through the giving of the Torah they were elevated above and transformed from the impurity of Egypt to the holiness of sanctity, therefore we eat milk, which is formed from blood, as it is said: blood is congealed and becomes milk. And there is in this a hint that judgment is transformed into mercy. And it is also customary to put saffron, which is called zaafran, into the foods and cooked dishes, because it brings joy and has a good fragrance, based on “the scent of your oils is good” (see Magen Avraham, subsection 6, in the name of the Zohar, and this is as I wrote). And one should not be lenient on Shavuot regarding eating meat after dairy or the reverse, more than during the rest of the year. And also regarding milk that was milked that day by a non-Jew – it is forbidden to eat it, just like on any other festival.
